Gluten Free Pumpkin Chocolate Chip Cookies

Makes 36 cookies

Gluten Free Pumpkin Chocolate Chip Cookies

• 1 cup canned pumpkin
• 1 cup white sugar
• 1 egg
• ½ cup vegetable oil
• 1t water
• 1t vanilla extract
• 2 cups Gluten Free 1/1 flour mix
• ½ tsalt
• 1t baking powder
• 1t baking soda
• 2t ground cinnamon
• ¼t ground gloves
• 2 cups semi-sweet/parve chocolate chips


Directions: Preheat oven to 350 degrees. Combine pumpkin, sugar, egg, and vegetable oil, water and vanilla in mixing bowl. In separate bowl, combine flour, salt, baking powder, baking soda, cinnamon, and cloves and choc chips. Add dry ingredients to the wet ingredients in two batches. Mix with a hand mixer just until incorporated. Drop by tablespoon or scoop onto greased cookie sheet and bake for 11-15 minutes or until lightly browned.
