Unicorn Rainbow Cupcake Cones

Ingredients:

1 1/2 cups Sugar

4 eggs

2 teaspoons vanilla

2/3 cup vegetable oil

1 cup milk

2 1/2 cups all-purpose flour

2 teaspoons baking powder

¼ teaspoon baking soda

1/2 teaspoon salt

24 Flat-bottomed Cake Cup Ice Cream Cones

 

Instructions:

Preheat oven to 350° F. With an electric mixer on high, beat sugar, eggs, & vanilla for one minute to thicken. On low speed add the milk until combined. Add the remaining ingredients to the bowl and mix just until combined. Do not over-mix. This should take less than a minute.

Now separate your cake batter into four bowls for four colors.

Add red, green, yellow, and blue food coloring separately to each bowl to create 4 different batter colors.

 

Set your ice cream cones into a cupcake/muffin tin. Use foil to help sturdy them if they do not stand up.

 

Alternate batter colors into each cone until you have about 1 inch room left from top, which allows for the cupcake to bake up.

 

Move cupcake pan to the oven, taking care not to spill. The cupcakes are done when a toothpick comes out clean, which is anywhere from 15-25 minutes. Cool completely before decorating.
